You need to get hold of some software to organize your collection. Previously I used shareware software (everything mentioned here is for windows only) like FlipTech's Shuffleplay (2.80beta). It's a great and very reliable piece of software, but unfortunately it's no longer maintained. What is worse is that it only works with id3v1 tags. So only a fixed number of genres are available (125) and most likely not the ones you like. However, Bebop, Booty Bass, Christian-Rock, Christian-Rap and Sonata are all there. The trick is to use id3v2 tags instead. This also allows you to add lyrics and album art - which will be displayed on your iPod. Note that when both id3v1 and id3v2 tags are available, iTunes will always prefer the id3v2 tag.
I found a really good editor called mp3Tag from maniac tools. I guess they ran out of ideas when they had to find a cool-sounding name! It has an extremely nice interface and lets you handle both id3v1 and id3v2.3 tags. When you have edited the file names and / or id3 tags with mp3Tag you shouldn't simply drag and drop the files to iTunes: I find that the genres are often not read correctly. Instead I use the free software iTunes Library Updater (version 1.22) to make absolutely sure the tags are entered correctly.
